The defining step in the bilona method is what happens before the ghee is cooked. Milk is first cultured into curd. The curd is churned to separate butter from buttermilk, and the butter is then heated to make ghee.
That is a different route from making ghee directly from cream. The distinction is in the method, so “bilona” should tell you something more specific than “pure” or “desi” on a label.
What the finished ghee can, and cannot - tell you
The aroma, colour and texture of ghee make it a pleasure to use, but appearance alone cannot verify how it was made. A golden jar does not prove that curd was churned first. When choosing bilona ghee, the useful question is about the process behind the jar.
The method also helps explain why bilona ghee may cost more: culturing and churning add steps before the butter can be turned into ghee. Claims about specific health or digestion benefits need separate evidence; the traditional method alone does not establish them.
Honey deserves the same curiosity
With honey, the questions shift from churning and cooking to origin and handling. Where was it sourced? What was done to it after harvest? These details offer a clearer picture than colour or clarity alone.
Raw honey may crystallise over time, and that can be a natural change. But crystallisation - or its absence - is not a reliable test of whether a particular jar is raw. The better starting point is clear information about its source and processing.
